Pili nuts grow at the base of a volcano in the Bicol region of the Philippines. The volcanic subsoil ensures that the soil is rich in minerals, while the climate provides sufficient water. The nut is characterized by the hard shell. This arises because the fruit must remain protected during heavy rainfall, strong winds and even typhoons! This makes it a complicated process to harvest the pili nuts. The hard shell is opened by the locals by hand, with a machete.
